Fresh water is water intended for human consumption (EDCH) :
It is all water, either as it is or after treatment, intended for drinking, cooking, preparing or producing food, or for other domestic uses, in public places as well as private places, regardless of their origin, and whether these waters are supplied through a distribution network, supplied from a tanker truck or tanker boat, or, in the case of spring water, bottled. All water used in food businesses for the manufacture, processing, preservation or marketing of products or substances, intended for human consumption, which may affect the safety of the final food, including water-based ice cube.
We can therefore distinguish :
- Distribution water (tap water...)
- Production water (drilling water, well water...)
- Resource waters with groundwater and surface water (river water, lake...) classified by group according to their treatment :
* Group A1: simple physical treatment and disinfection;
* Group A2: normal physical, chemical and disinfection treatment;
* Group A3: extensive physical and chemical treatment, refining and disinfection operations.
The decree of 11 January 2007 gathers the limits and quality references to be applied to these waters intended for human consumption.

- spring water is groundwater, micro-biologically healthy and protected against pollution risks. It is drinkable in its natural state and bottled at the source. Unlike natural mineral waters, the composition of spring water is not systematically stable.
- lnatural mineral water can only be of underground origin and has been formed without any risk of pollution. Microbiologically healthy from the outset, it is protected from all human pollution and is not subjected to any disinfection treatment. It is characterized by its original purity and the stability of its mineral composition. Natural mineral water must be bottled at the source. It is characterized by its content of minerals, trace elements or other constituents and by its original purity.
These waters may be subject to specific labelling (rich in mineral salts, suitable for the preparation of infant foods...)
The decree of 14 March 2007 gathers the quality criteria to be applied to these conditioned waters.
